This is a natural (Dry processed) Yirgacheffe co-op coffee with Fair Trade and Organic certification. The WORKA co-op is part of the YCFCU cooperative and operates in the Gedeo zone within the Yirgacheffe region. Crystal-clean and sweet as candy -- it's a like a fruit salad. There's kiwi, strawberry, mango, blueberry, and lemon in here. High acidity -- but in a good way -- you want a coffee like this to be bright. Body is neither too thin or too creamy -- it's just right. No fermented or earthy tastes at the finish which is the flaw of so many natural Ethiopians. It's just a great example of a natural Yirgacheffe -- not your ordinary mug of coffee.
Roast this like you would any other natural process Ethiopia. On my commercial drum roaster, a City Roast with an ending bean temp of 400 is about 20 seconds past the end of the 1st cracks and seems to be the sweet spot. However, this bean is more forgiving than most Ethopians. We've found that the bean responds well to a variety of roasting curves. Excited about this one.
