Guatemala Huehuetenango Santa Rosa

The growing region of Huehuetenango (pronounced way-way-tenango) is a big thing in the coffee market right now, slowly overtaking the more famous Antigua region in popularity and demand.  This is a 2014 shipment from the Santa Rosa Estate.  When I roast it exactly 5 seconds past the first snap of the 2nd cracks, the grounds smell like fudge brownie batter, and the taste is the most chocolatey coffee in our inventory.  The only complaint is that the body is a bit too thin, however, if you brew it with a french press or pourover, it solves that problem.  The bean is rather particular, and seems to taste flat if its roasted too dark or too light, so I wouldn't experiment too much with this one.  but when you get it right, that fudge brownie aroma and taste is so comforting on a cold morning...
